Blue Dot Restaurant Equipment Crepe Cooking Instructions . . .
1) Dispense 2 oz. of batter onto the crepe surface with ladle (not included with crepe maker)
2) Spread batter in circular motion with wooden crepe spreader (included with crepe maker)
3) Cook crepe for approximately 30 seconds, until the crepe surface starts to bubble
4) Turn crepe over with 14" flat spatula turner (not included with crepe maker; included with
CK-1 and CK-2 crepe kits)
5) Cook another 30 seconds, while adding ingredients
6) Fold crepe in triangle, half moon or square and serve
Blue Dot Restaurant Equipment Recipe for Crepe Batter . . .
Ingredients:
 - 4 oz. plain white or self-rising flour
 - 1 pinch of salt
 - 1 large egg
 - 1/2 pint milk
 - 1 tbs of unsalted butter
Instructions:
 - Sift flour and salt into bowl
 - Beat to smooth, cream batter with unbeaten egg, 1/2 of the milk and melted butter
 - Stir in the remaining milk and use for any of the recipes
 - Basic crepe recipe makes approximately 8 pancakes
Blue Dot Restaurant Equipment Sweet Crepe Recipe- Cottage Cheese & Raisins . . .
Ingredients:
 - 8 oz. of cottage cheese
 - 1 cup of raisins
 - 1/2 pint fresh washed strawberries
 - Low fat whipped topping
Instructions:
 - Mix cottage cheese and raisins in a bowl
 - Cook crepe as indicated above
 - Place two or three tablespoons of filling in each crepe and fold
 - Apply whipped topping and halved strawberries as desired

Ingredients:
 - 8 oz. of shredded cheddar cheese
 - 8 oz of thinly sliced ham
Instructions:
 - Cook crepe as indicated above
 - Sprinkle 2 oz. of shredded cheese evenly on crepe
 - Place 2-3 slices of ham in center across the middle
 - Fold crepe and serve
